آلودگی میکروبی بستنیهای سنتی و عوامل مؤثر بر آن

سابقه و هدف: بستنی محصول لبنی و منجمد شدهای است که به دلیل محیط مغذی به راحتی آلوده شده و سبب مسمومیتهای غذایی میشود. هدف از این پژوهش، تعیین آلودگی میکروبی بستنیهای سنتی و عوامل مؤثر در آن است.
مواد و روشها: در این بررسی در تابستان 1391 از 50 نمونه بستنی سنتی و مواد اولیه ﺁن، دست کارگران، ظرف بستنی واسکوپ نمونه گیری شده است. نمونهها در شرایط استریل به آزمایشگاه کنترل کیفی مواد غذایی منتقل شدند و در کمتر از 1 ساعت، آزمونهای میکروبی انجام گرفت. نتایج با استفاده از نرمافزار آماری SPSS و آزمون کی دو و آمارهای تحلیلی- توصیفی تجزیه و تحلیل شدند.
یافتهها: نتایج این تحقیق نشان داد که 84 درصد بستنیهای سنتی آلوده هستند. 28 درصد استاف اورئوس 52 درصد اشرشیا کلی، 4 درصد باسیلوس سرئوس، 2 درصد لیستریا مونوسایتوژنز، 14 درصد انتروکوک، 74 درصد شمارش کلی میکروارگانیسمها بیشتر از حد مجاز استاندارد، 70 درصد شمارش انترو باکتریاسه بیشتر از حد مجاز استاندارد بوده است. ارتباط بین آلودگی بستنی و آلودگی مواد اولیه، اسکوپ، دست کارگر و ظرف بستنی معنیدار بوده است (05/0p<).
استنتاج: مواد اولیه بستنی شامل شیر، شکر، ثعلب، وانیل، دست کارگران، اسکوپ و ظروف نگهداری، منابع اصلی آلودگی بستنیهای سنتی به شمار میآیند. میزان بالای آلودگی بستنی و خطرات ناشی از آن، لزوم کنترل و مراقبت بیشتر مراکز بهداشت بر واحدهای تولیدی و تشویق عموم به استفاده از بستنیهای پاستوریزه از طریق رسانههای گروهی را نشان میدهد.
Background and purpose: Ice cream is a frozen dairy product which is contaminated easily due to its nutrient environment and could endanger people’s health through food poisoning. The aim of this study was to determine the microbial contamination in traditional ice cream and factors affecting it.
Materials and methods: This study was carried out in summer of 2012 using 50 samples of ice cream, row materials, scoops, containers, and staff’s hands. The samples were transported in sterile conditions to the Food Quality Control Laboratory.
Results: The results showed that 84% of traditional ice cream were contaminated. The contaminations included Staph aureus (28%), Escherichia coli (52%), Bacillus cereus (4%), Listeria monocytogenes (2%), Enterococcus spp (14%), microorganisms (74%), and enumeration of enterobacteriaceae (70%). There was also a significant correlation between contamination in ice cream and row materials, scoops, containers, and staff’s hands (P<0.05).
Conclusion: The main sources of contaminants for traditional ice cream were raw materials such as milk, sugar, salep, vanilla, utensils and staff’s hands. High levels of contamination in traditional ice cream and the risks of consumption indicates a serious need for greater control over production units and encouraging the public to use pasteurized ice cream through mass media.
