fa بررسی میزان باقیمانده آفت‌کش‌ها در برنج تولیدی استان مازندران در روش کشت کنترل شده در سال 1401 Investigation of the Residue Levels of Pesticides in the Rice Produced in Mazandaran Province in the Controlled Cultivation Method in 2022 سم شناسی toxicology گزارش کوتاه Brief Report سابقه و هدف: استفاده از آفت‌کش‌ها به منظور پیشگیری، از بین بردن و کاهش آفات آسیب‌‌رسان به محصولات در مراحل مختلف کشت محصولات و بهبود سلامت محصولات کشاورزی، آفت‌ها، همچنان یکی از عوامل آسیب رسان به محصولات کشاورزی، تخریب آن‌ها و تهدید امنیت غذایی به‌شمار می‌روند. اگرچه استفاده از آفت‌کش‌ها و کودهای شیمیایی در کشاورزی مدرن به‌طور معنی‌داری باعث افزایش محصولات کشاورزی می‌گردد؛ اما باید توجه داشت که استفاده بیش از حد و نامناسب از آفت‌کش‌ها در تولید محصولات کشاورزی و توجه نکردن به عوامل موثر بر میزان باقیمانده آن‌ها، باعث می‌شود میزان باقی مانده آفت‌کش‌ها در این محصولات بالاتر از بیشینه حد مجاز تعیین شده (Maximum Residue Limit) توسط استانداردهای ملی و بین‌المللی باشدکه از عوامل خطر برای سلامتی انسان و آلودگی محیط زیست بشمار می رود. با توجه به افزایش استفاده گسترده از آفت‌کش‌ها در کشاورزی، این موضوع به یکی از مباحث قابل توجه ایمنی مواد غذایی تبدیل شده است. علی‌رغم این که روش‌های مختلفی برای ارزیابی خطر بالقوه آفت‌کش‌ها برای سلامت انسان و محیط زیست و کنترل مصرف آن‌ها مورد استفاده قرار گرفته است، هم‌چنان تلاش برای کاهش استفاده از سموم دفع آفات برای به حداقل رساندن خطر برای سلامتی انسان و محیط زیست، چالش برانگیز است و یک هدف ارزشمند به‌شمار می‌رود. هم‌چنین با توجه به این که برنج از منابع مهم تامین انرژی بشمار می‌رود، مطالعه بقایای آفت‌کش‌ها در برنج برای محافظت از سلامت مصرف‌کننده همواره قابل توجه می‌باشد. از آن‌جایی‌که این محصول، یک محصول استراتژیک استان مازندران محسوب می‌شود، این پژوهش با هدف بررسی میزان باقیمانده آفت‌کش‌ها در برنج تولیدی استان مازندران صورت گرفت. مواد و روش‌ها: باقیمانده آفت‌کش‌ها در برنج تولیدی شهرستان ساری در مناطقی که با هدف کنترل نوع، شیوه مصرف آفت‌کش‌ها تحت پایش سازمان جهاد کشاورزی، مرکز تحقیقات کشاورزی و منابع طبیعی استان مازندران قراردارند، به صورت مقطعی، ارزیابی شد. در این پژوهش 15 نمونه برنج مورد بررسی قرار گرفتند. هر نمونه حدود 1 کیلوگرم از هر محصول بود که در دمای 4 درجه سانتی‌گراد به آزمایشگاه کنترل مواد غذایی دانشگاه علوم پزشکی مازندران منتقل شد و میزان مصرف و باقی مانده سموم مصرفی به روشGC-MS شناسایی شد. 200 نوع آفت‌کش که براساس گزارش پایش کشوری سازمان غذا و دارو و ISIRI به‌عنوان آفت‌کش‌های پرمصرف مجاز و غیرمجاز مصرفی در برنج شناخته شده بودند، انتخاب شده و باقیمانده آن‌ها مورد ارزیابی قرار گرفتند. یافته‌ها: نتایج تجزیه و تحلیل 15 نمونه برنج از مناطق تحت پایش در شهرستان ساری نشان داد که از 200 نوع آفت‌کش پرمصرف مجاز و غیرمجاز مصرفی هیچ‌گونه باقیمانده‌ای از آفت‌کش‌ها در محصولات مورد بررسی یافت نشد. استنتاج: به‌طورکلی اگرچه باقی مانده آفت‌کش‌ها در مطالعه حاضر مشاهده نشد؛ اما باید توجه داشت که باقیمانده آفت‌کش در سبوس نمونه‌های مورد بررسی مورد ارزیابی قرار نگرفت و با توجه به این‌که سبوس از طریق خوراک دام وارد چرخه غذایی انسانی می&lrm;گردد، به هر حال حتی مصرف کنترل شده آفت‌کش‌ها می‌تواند به‌صورت غیرمستقیم بر سلامت و دریافت غذای انسانی تاثیرگذار باشد. هم‌چنین در کشت محصولات فوق از آفت‌کش‌ها استفاده شد که در مقادیر کنترل شده هم می‌توانند خاک و آب را آلوده کنند. با توجه به تاکید بر کاهش مصرف آفت‌کش‌ها و جایگزینی آن‌ها با روش مدیریت کشت کنترل شده (ICM) هم‌چنان هدف این پژوهش ومتصدیان امور بر این می‌باشد که در مراحل بعدی با آموزش و حمایت از کشاورز،کشت را به سوی ICM سوق دهند تا گام بلندتری در سلامت انسان و حفظ محیط زیست و کاهش هزینه‌های مربوط به استفاده از آفت‌کش‌ها برداشته شود.   Background and purpose: The employment of pesticides for the prevention, elimination, and reduction of pests detrimental to agricultural products throughout various stages of crop cultivation is essential for improving the health of these products; nevertheless, pests remain a critical factor in the degradation and destruction of agricultural goods, posing a threat to food security. Even though the deployment of pesticides and chemical fertilizers in modern agricultural practices considerably boosts agricultural output. However, it should be noted that excessive and inappropriate use of pesticides in agricultural product production and failure to consider factors affecting their residue levels can result in pesticide residues in these products exceeding the maximum allowable limit set by national and international standards (Maximum Residue Limit), which is considered a risk factor for human health and environmental pollution. Due to the increasingly widespread use of pesticides in agriculture, this issue has become a significant topic in food safety. Despite various methods being used to assess the potential risks of pesticides to human health and the environment and to control their consumption, efforts to reduce the use of pest control poisons to minimize the risk to human health and the environment remain challenging and a valuable goal. Additionally, since rice is considered a major source of energy supply, studying pesticide residues in rice to protect consumer health is always significant. As this product is considered a strategic product in Mazandaran province, this research was conducted to examine the level of pesticide residues in rice produced in Mazandaran province. Materials and methods: In the cross-sectional residues of pesticides in the rice produced in Sari County in areas where the type, and method of pesticide use are monitored by the Agricultural Jihad Organization, the Agricultural Research Center, and Natural Resources of Mazandaran Province were investigated. In this study, 15 samples of rice were examined. Each sample of about 1 kilogram of each product was transferred to the Food Control Laboratory of Mazandaran University of Medical Sciences at a temperature of 4 degrees Celsius, and the consumption and residue levels of consumed toxins were identified using the GC-MS method. 200 types of pesticides, which were recognized as authorized and unauthorized pesticides for use in rice according to the national monitoring report of the Food and Drug Organization and ISIRI, were selected and their residues were evaluated. Results: The analysis results of 15 samples of rice from monitored areas in Sari County showed that none of the 200 types of authorized and unauthorized pesticides had any residue in the products under investigation. Conclusion: Although no pesticide residues were observed in the present study, it should be noted that pesticide residues in the bran of the samples under investigation were not evaluated. Considering that bran enters the human food chain through animal feed, controlled pesticide consumption can still have indirect effects on human health and food intake. Also, in the cultivation of the above products, pesticides have been used, which in controlled amounts can contaminate soil and water.
